Akcan, A.Y., Obtaining High Purity Resveratrol from Industrial Wastes of Black Grapes (Vitis Vinifera L.), Hacettepe University, Graduate School of Health Sciences, Pharmacognosy Program, Master of Science Thesis, Ankara, 2024. The aim of this thesis is to develop a method for obtaining high-value resveratrol from grape (Vitis vinifera L.) skins, which are found as industrial waste in Turkey, and to determine the amount of resveratrol in the grape skins, seeds, grape juice, and wine. Additionally it is aimed to adapt this study, which was carried out on a laboratory scale, to a pilot scale. Resveratrol is a polyphenol of nutritional and medical importance, and its effects in various fields such as cancer and cardiovascular diseases have been extensively researched. It is a phytoalexin whose use and demand are increasing every day worldwide. The Vitis vinifera L. plant is extensively cultivated both for wine and table grape purposes in our country and around the world. In the study, wastes of black Öküzgözü grapes specific to the Elazığ region were obtained from a wine factory producing Öküzgözü wine, and trans-resveratrol was obtained from the ethanol extract obtained from its skins using column chromatography and compared with the reference compound using Thin-Layer Chromatography (TLC). The accuracy was confirmed by HPLC [solvent system: Water:Acetonitrile(75:25)]. Resveratrol was used as the reference compound. Different parts of the plant (skin, seed, grape juice, and wine) were examined by HPLC to determine the amount of resveratrol they contained.
