Arachis hypogaea L. is the only cultivated peanut species in the Fabaceae family. There are phytochemical analyses for various organs of peanut in the literature. As a result of these analyses, phytosterols, anthraquinones and phenolics were detected. The presence of resveratrol has been detected in the shells, leaves and roots of peanuts, especially in their seeds. Polydatin, the glycoside of resveratrol, is also found in various organs of peanuts. In addition to having strong antioxidant activity, these two compounds also have cardioprotective, anti-inflammatory, neuroprotective, antiatherosclerotic and immunoregulatory activities. Within the scope of the thesis, resveratrol and polydatin amounts will be determined by HPLC (High Performance Liquid Chromatography) method in the roots and shells, which are waste after harvesting, of 6 peanut varieties grown in Hatay. Ethanol:Water (80:20) extracts of the roots and shells prepared at 40°C, 70°C and in the microwave (at 70W) were used in the analysis. According to the results obtained, when all the extracts are compared to each other, the extract with the highest yield in terms of polydatin is the shell extract of the Efsane variety prepared at 40°C (0.85mg/g), while the most productive extract in terms of resveratrol is the shell extract of the Masal variety prepared at 70°C (0.85mg/g). It was found to be 0.84mg/g.
