In order to adapt to the environment in which man lives and to meet his basic needs, everything he produces by interacting with nature and the ways of production have provided the formation of traditional knowledge memory. Traditional knowledge memory is a cumulative, variable memory that changes due to the variable nature of people and their needs while being transferred from generation to generation, and is enriched by new observations and experiences. Traditional knowledge memory has its own specialization areas such as folk cuisine, folk agriculture, folk botany. In this study, the subject of traditional knowledge memory is limited to the field of agriculture and food. The issue of agriculture and food is at the center of many issues. Especially today, environmental movements, epidemics such as Covid-19 and the problems in ensuring food safety have led to concepts such as natural and organic. Traditional production methods, the search for ancestral seeds have brought traditional knowledge-based practices to the agenda frequently. From the point of view of how traditional knowledge is updated in line with the needs and conditions of generations, it is focused on how this memory is in the field of agriculture and food for humanity at both local and universal levels. In order to observe the transformation of traditional knowledge in the triangle of human, culture and environment, the field research part of this study was carried out in Tahtacıörencik village of Güdül district of Ankara province. The main reasons for choosing Tahtacıörencik village as the research area are the ongoing agricultural production activities and the presence of the Tahtacıörencik Wildlife Collective, which is the guide in the realization of these activities. This study aims to show the points such as what the soil gives and cannot give to human beings, how humans make up for those deficiencies, commercialization, transformation and digitization while completing it, and the effects of these points. In the study, it has been tried to reveal the importance, applicability and benefits of both local and universal level as a model that bases traditional knowledge on human, environment and culture in agriculture-based social and economic sustainable development.
