Farklı Orijinden Sütlerin Rennetlenme Kinetiklerinin Yüzey Hidrofobisitesi Yaklaşımıyla İncelenmesi
Abstract
The objective of this study is to investigate the differences in rennetting kinetics of milks from different origins including bovine, ovine, caprine and buffalo via surface hydrophobicity approach. Fmax valueswere found to be highest in cow milk. On the other hand, 1 Kd values were higher in buffalo milk. Ovine milk samples had the lowest number of hydrophobic surface sites and bonding affinity among the investigated samples. PSHI was found to be highest for bovine milk and the lowest for ovine milk samples. ANS and protein partition were evaluated for the precipitates obtainedby centrifuging the samples atcertain intervals during renneting period. And the renneting period was interpretated via curves showing ANS and protein partition over time for different origins.Protein partition and ANS partition curves showed similar trend between bovine-ovine and caprine-water buffalo milk samples.
