This thesis is summarized as botanical, phytochemical, analytical and biological activity titles. The morphological and anatomical characteristics of Rosa damascena Mill. (Rosaceae) petals have been described in the botanical section of the study. Biomarker compounds, kaempferol 3-O-galactoside and kaempferol 3-O- glucoside, were isolated using chromatographic techniques for analytical studies carried out within the scope of pharmacopoeia standard studies. In this context, TLC, HPTLC and HPLC method optimizations and HPLC method validation for methanolic extracts prepared from 10 different R. damascena samples, were performed. The inhibitory effects of extracts, volatile oil, rose water and pulp water on collagenase class MMP-1, MMP-8, MMP-13, gelatinase class MMP-2, MMP-9 and stromelysin class MMP-3 enzymes were investigated. The antioxidant capacities of the extracts were determined by β-carotene-linoleic acid, CUPRAC, FRAP and phosphomolybdate methods; radical scavenging capacities were determined by DPPH, ABTS and NO methods. Sun protection factors (SPF) of extracts were measured spectrophotometrically. As a result of the studies, it was found that R. damascena petals has skin anti-aging effect and can be an alternative for osteoarthritis treatment, has significant antioxidant and radical scavenging capacity and effective sun protection factor.
