Abstract
Folk economy is a branch of folklore that includes traditional elements that were created by the people in order to create their own livelihoods and meet their needs. In this regard, people can manage production and consumption activities based on a set of rules determined by themselves. As continuation of the said situation, the people can benefit from their traditional cultural values on the one hand and benefit from the classical attitudes of other cultures on the other hand. When considered from this point of view, folk economy, which has become one of the most basic elements of folk culture, stands out as one of the main determinants of cultural structure. Traditional culinary culture, on the other hand, is a branch of folklore that is based on the eating and drinking behaviors, eating habits, culinary practices and beliefs of the people regarding these. To put it another way, traditional culinary culture is based on a system that aims to compile and evaluate the ways, methods, procedures and techniques used in the preparation, storage, preservation, presentation and consumption of food and beverage products produced by the people, and the tools, instruments, means and equipment used within this framework. Therefore, within the scope of the traditional culinary culture, there are culinary understandings that differ according to countries, regions and territories, which the people have acquired with traditional methods and applied by advancing them from the past to the present. The aim of this study is to examine and analyze goose breeding in the context of folk economy and traditional culinary culture, considering its various aspects, as it is an important cultural heritage element from the past to the present. In the framework mentioned, goose was discussed within the scope of the principles of care, nutrition, breeding, production, consumption, marketing, slaughtering, preparation, drying, freezing, storing, preserving, presenting and similar principles, which are carried out in line with the traditional economy cultures and traditional culinary cultures of the people. Based on the relevant subjects, goose culture was studied in the light of the historical and functional data of folklore, its economic activities regarding the people and the processes of change and transformation in the direction of culinary activities, and it was tried to be brought into the field of Turkish Folklore.
